HEALTHY BLUEBERRY AND OAT MUFFINS 

ANOTHER DAY, ANOTHER MEAL … 
BLUEBERRY AND OAT MUFFINS ! 

  

Ingredients :  

– 150g Flower

– 80g Oats 

– 1 large egg

– 225 g Natural yoghurt 

– 60ml Milk

– 15g of Sugar

– 200g Blueberries

– 2 tsp Vanilla extract 

– 1 tsp Baking powder

– 1/2 tsp Baking soda

– 1 tsp Cinnamon 
Cooking method :

 Preheat your oven to 175C and prepare your muffin tin. 

 In a large bowl combine oats, flower, baking powder, baking soda and cinnamon.

 In a separate bowl beat the egg and then combine with milk, yoghurt, vanilla extract and sugar. 

 Now combine the ingredients from both bowls together and add blueberries. 

 Divide the butter between 12 muffin cups and bake for around 20min. 

Meningitis B Vaccination … Yes or No? 

 It has been very loud recently about the Meningitis B vaccination. As you all heard (or not) in UK from the 1st of September 2015 all babies are receiving the Meningitis B vaccination. UK is the first country to roll it out to all babies being born. This news is great but what about all of the babies born after 1st of May 2015 who are not entitled to it ? 

 If you don’t know much about Meningitis B this is some general information available on NHS website:

Meningococcal group B bacteria is a serious cause of life-threatening infections, including meningitis and blood poisoning, worldwide and the leading infectious killer of babies and young children in the UK.

There are 12 known groups of meningococcal bacteria, and group B (Men B) is responsible for about 90% of meningococcal infections in the UK.

Meningococcal infections tend to come in bursts. In the past 20 years, between 500 and 1,700 people every year, mainly babies and young children, have suffered from Men B disease, with around 1 in 10 dying from the infection. Many of those who survive suffer terrible permanent disability, such as amputation, brain damage and epilepsy.

  Once I found out that Chloe won’t qualify to get the vaccination on NHS me and my husband decided that we will do it privately. Somehow though life got in the way … We tried to book an appointment and were placed on a waiting list… Then when we finally managed to get one we had to cancel it due to holidays …. And then with busy lives we forgot about it…

 Untill recently when a very sad story came out about a 2 year old little girl called Faye Burdett who lost her battle with Meningitis (rest in peace little angel). This story has shocked everyone and sent parents in to a panic to get their kids vaccinated. I was one of those parents, I just couldn’t risk it even if the chances of getting this awful disease are small. I must say that after the story has broken out it became almost impossible to get the vaccination ! There is a national shortage of the vaccination and most of the clinics have a very long waiting list with no date of when the vaccine will be awailable (hopefully in the summer). We were lucky to get it but it was expensive. What is very sad to see is all of the private clinics making a fortune from petrified parents. The vaccination costs £75 but most private clinics charge now £200 upwards!!!! This makes my blood boil!!!

 So what is your opinion dear parent? Would you pay for the Vaccination though in theory the chances of your child getting it are 4 in 100,000? Or do you think that we all got in to a silly panic after the case of poor little Feya? 

 There is right now a big debate going in parliament about introducing this vaccination to older children after a petition to the government was signed by over 800,000 people and became the most signed petition ever …. Let’s see what will be the outcome of it.

Bilingual babies ! When and how to introduce more than one language ? 

Bilingual babies …. 

I am polish mum living in UK with my English husband. It was very important to me to make sure that my baby girl speaks polish as well as she does english. I was researching a lot about the best way to bring up a child in bilingual family.

 There are two very different opinions when it comes to when and how to teach your child second language. 

 1. You shouldn’t introduce second language until your child is 3 years old. It believes that doing it any earlier confuses the child and delays their speech development. 

2. That you should introduce both (or more) languages from the very beginning.

 Me and my husband have chosen to listen to the second method. From the first day that Chloe was born I have spoken to her in Polish and my Husband in English. 

 I must say that I am glad that we decided to do this. At 16 months Chloe understands pretty much everything that you ask her to do … both in Polish and English. Chloe can say lots of words in both of the languages as well. We can clearly see that she says much more English words  around 20 compared to only 10 in polish; this is due to the fact that she is surrounded 70% of the time by english language (at the nursery, when she is being looked after by grandparents and when her dad talks to her). This doesn’t bother me at all… 

  I find it incredible that she can say so many words let alone being able to say it in two languages and being able to clearly understands English and Polish !!!! 

 We have had an amazing example of kids being bilingual at a very young age. Our friends have a 3 years old daughter who speaks 3 languages!!!! No they are not one of the pushy parents 😁 Mum is from Colubmia so she speaks Spanish, Dad is from  Holland and speaks dutch, they communicate between each other in English and obviously they live in England so theirs daughter goes to the nursery in here. It’s amazing how at only 3 years old she knows who to speak to in which language and can switch between them easily in a split second ! 

 Key is to make sure that you speak to your child in this same language at all the time (that’s why I speak to Chloe only in Polish and my husband in English). You need to talk, sing, play and reed in this language as each of those actions helps your child develop their speach in different ways.

CHINKEN AND MUSHROOM IN CREAM SAUCE 

ANOTHER DAY, ANOTHER MEAL ….

CHICKEN WITH MUSHROOMS IN CREAM SAUCE. 

  
Ingredients:

– 1/2 onion (diced)

– 200g mushrooms (diced in to small cubes)

– 1 chicken breast (diced in to small cubes)

– 50g thin green beans

– 50g pearl barley 

– 1 tsp sweet paprika 

– 50ml chicken stock (baby one with no salt) 

– 1 tbsp reduced salt soy sauce

– 1tsp parsley (sliced)

– 50ml double cream

– 1tsp of corn flower

Cooking method :

Fry onion until golden, then add chicken and sweet paprika; fry until your chicken is cooked. At this point add mushrooms and fry for around 3 minutes, until mushrooms become soft. Add chicken stock and cream, cook for further 5 minutes. 

Meanwhile cook pearl barley according to the cooking instructions and also cook green beans for 5 minutes so that they are soft. 

 If your sauce is too thin add corn flower to thicken it. (Mix corn flower with a few spoonfuls of your sauce and then add to the the pan, bring to boil).

 Once green beans are cooked cut them in to a size that your child can manage and add to the pan. Add pearl barley to the mixture and parsley and the dinner is finished! 

For an adult version just use bigger quantities :

– 1onion (diced)

– 400g mushrooms sliced

– 1 chicken breast sliced

– 150g thin green beans

– 150g pearl barley 

– 2 tsp sweet paprika 

– 1/2 glass chicken stock 
– 1 tbsp reduced salt soy sauce

– 2 tsp parsley (sliced)

– 150ml double cream

– 1 tbsp of corn flower

-salt to taste

BABY DEVELOPMENT APP

As our baby grows and develops so has to our imagination to create great games. It’s natural to want to check that our precious baby develops “right”, does the “right” thing at the right time (I must stress in here that each child develops at its own pace and does things at its own time!!! ; Look at Chloe walking at 9 months but still only 2 teeth at 14 months😂) 

 When Chloe was around 6 months old I started looking for help/inspiration on how I should play with her. We had our games but there is just so much you can play the same repertoire over and over again! I wanted our games to be fun but also to support Chloe’s development. 

 I came across an App called Baby Sparks and I have been using it ever since! I love this app and would recommend it to everyone. 

  
What I love about it?

– It has a month-by-month Baby development guide. This has helped me to understand baby development and what I should expect to happen in the near future. 

– Daily program. This is full of activities for the day. Those change constantly so your play time is never boring. What is great is that all of the activities are divided in to groups : 

* Gross motor skills

* Fine motor skills

* Cognitive

* Speech 

* Sensory

* Self Care

* Emotional 

  
 You can choose what part of your child development you want to concentrate on and practise that day. 

 Main purpose is to help your child develop but it’s done in a very fun way! It keeps your days versatile and your play time interesting. 

–  Another great feature is the ability to brows the activities by: Category, Place, Milestone.  You don’t have to stick to the daily plan you can just freestyle 😊

 You can also mark activities as: Completed, Favorite and Archive. 

 The App is available for different ages. It’s not a free app but it’s not expensive; at £3.99 in my opinion it is worth every penny!

Fancy Jogging bottoms

 Who said that jogging bottoms need to be boring ?! 

 I must admit I am not a fan of dressing Chloe in jogging bottoms but there are times when putting nice clothes on is just silly (nursery, soft play, day at home) 

 There are some cute joggers out there. Those combined with some cool t-shirt would make a great outfit!

I love this toy!!!!

  
Chloe has recieved it as a present for Christmas. I must say it’s a brilliant toy and both me and Chloe love it.

Chloe doesn’t like to get messy (I know its very unusual for a toddler; she obviously got OCD from her mum:-) ) and I don’t like mess.

This mat is amazing for big babies (yes I still cannot bring myself to call Chloe a toddler) who just start to learn what drawing is and how to do it. This matt has a pen which you fill with water, kids can draw on the mat with “water”( yes water ! This means no colourful marks on the floor, furniture and walls … for now anyway) and as the water dries up the drawing disappears.

I would highly recommend this !

BUCKWHEAT WITH KALE


Ingredients: 

– 1/4 of cauliflower (chopped in food processor)

– 1 onion 

– 1 carrot (grated) 

– 100g buckwheat 

– 2 handfuls chopped kale leaves 

– 1 garlic clove

– 1/2 tsp turmeric 

– 1/2 tsp cumin 

– 1 glass of water

– 1 tbsp soya sauce 

– 1/4 glass of vegetable stock (withou salt)


Cooking method:

      Chop onion and garlic in food processor and fry in a little bit of olive oil. Add cauliflower and carrot to the pan and cook for 2 minutes, then add turmeric and cumin.   

 Add buckwheat to the pan, fry for 2 minutes then add vegetable stock and bring to boil. Simmer for around 10 minutes (untill all vegetables are cooked). At the end add soya sauce and kale and cook for another minute.

  
 Dish is ready ! Packed with lots of flavour and goodnes ! Hope that you little one will enjoy it !

COCONUT AND BANNAN (SUGAR FREE) PANCAKES

Babies and kids love pancakes. This is a great breakfast, snack or a very healthy desert.


Ingredients :

– 400ml coconut milk

– 3 bananas

– 2 tsp baking soda

– 1 1/2 cup of flower

– 2 eggs

– 1 tsp vanilla extract

Cooking method :

Warm up coconut milk in the cooking pan, the reason we do it is to make sure that we have one cream consistency.

Blend bananas. Combine all ingredients together until your mixture is smooth.

Fry on a non stick pan.
