PANCAKE … sprinkled with magic

This is a revamp of my childhood favourite dish – pancakes !!! This is such a delicious and low in sugar : desert/snack/lunch. You can make it in so many different combinations, the only thing which will stop you is your imagination. This one is called : Pancake Sprinkled with Magic because my daughter thinks that I do magic to make it in her favourite colour – purple.
PANCAKE:

Ingredients

– 100g plain flour

– 2 eggs

– 300ml semi-skimmed milk

– Coconut oil for frying

Put the flour into a large mixing bowl. Make a well in the centre and crack the eggs into the middle. Pour in about 50ml milk and start whisking from the centre, gradually drawing the flour into the eggs and milk. Once all the flour is incorporated, beat until you have a smooth, thick paste. Add a little more milk at the time.

Heat the pan over a medium heat, add the butter and fry for 30s on each side.

PURPLE FEELING:

– 100g ricotta cheese (or any soft white cheese)

– 2 handfuls of blueberries (need to make sure that they are sweet)

Heat the blueberries in the pan for 3-5 minutes (until releasing the juices). Cool down the blueberries, then blend. Mix with the Ricotta cheese.

Depending on how much filling you want in your pancakes you might need to double the ingredients.

Ingredients :

– 100g flower

Cooking method:

Whisk everything together until well combined for together.

Spray small (15cm) frying pan with coconut oil (you can use butter or any other oil, I use coconut one as it seems to be one of the healthier options, and the spray uses very minimal amount of it)

SPAGHETTI A’LA CHILLI CON CARNE

– 1 tsp parsley

– 1 tsp oregano

-1 tsp cumin

– small can of sweetcorn

– handful of salad beans (optional)

– 100g of pasta (I used normal pasta but you can use the baby one)

SCHABOWE (pork in breadcrumbs)WITH SWEET POTATO CHIPS & PEAS

Ingredients:

– 1 pork filet (chicken and turkey breast are brilliant as well)

– 1 sweet potato

– 50g peas

– thyme

– 1 egg

– 50g breadcrumbs

– olive oil

Cooking method:

Preheat your oven to 200C. Wash, peal and slice sweet potatoes. Put them on a baking tray and sprinkle with thyme and a little bit of olive oil. Bake for 15minutes.

Make sure that your filet is around 1 cm thick. If you are using chicken breast flatter it with a meat hammer or rolling pin.

Prepare 2 plates: on one whip an egg so it’s one consistency; on the second one put breadcrumbs.

Cover meat in egg then breadcrumbs and fry on a frying pan on a low heat for 5 minutes on each side.

Boil water and pour over frozen peas; leave for few minutes. Cooking peas in unnecessary. Peas its such a small vegetable that leaving it in a boiled water for 2 minutes defrosts it and that way it will keep all of the goodness.

For a grownup version just season the egg with slot and pepper before dipping meat in it.

Enjoy it !!!

ANOTHER DAY,ANOTHER MEAL … CAULIFLOWER AND SWEET POTATO CURRY

ANOTHER DAY, ANOTHER MEAL …

CAULIFLOWER AND SWEET POTATO CURRY:

We love curry in my house and luckily for us so does Chloe. Now that she is one year old I can make a kids version of the curry that we eat, which makes the cooking so much easier.

Hope that your baby will like it as well.

Ingredients:

– 100g chicken

– 150g cauliflower

– 1/2 onion

– 200ml tomatoes

– 200ml of coconut milk

– 2tsp of mild curry powder

– 2 sweet potatoes

– 1 tbsp of basil

– 1 tsp ginger (cut in to very small cubes)

Cooking method :

Peal and slice sweet potato; steam until soft*

Fry your onion on a little bit of olive oil for 3 minutes. Add chicken and curry powder, fry for 5 minutes. Add tomatoes and coconut milk and simmer for 5 minutes.

Meanwhile wash your cauliflower and blend it in the food processor (if your baby/child is older you can divide it in to small florets instead).

Add cauliflower in to the curry and simmer for another 10minutes. At the end add basil.

Cut sweet potatoes in small cubes and combine with the curry.

Your dinner is ready to serve!

* I like to cook potatoes separately by steaming to preserve more nutritions and because it’s so much easier to cut them in small cubes once they are cooked.
