ANOTHER DAY,ANOTHER MEAL … CAULIFLOWER AND SWEET POTATO CURRY

ANOTHER DAY, ANOTHER MEAL …

CAULIFLOWER AND SWEET POTATO CURRY:

We love curry in my house and luckily for us so does Chloe. Now that she is one year old I can make a kids version of the curry that we eat, which makes the cooking so much easier.

Hope that your baby will like it as well.

Ingredients:

– 100g chicken

– 150g cauliflower

– 1/2 onion

– 200ml tomatoes

– 200ml of coconut milk

– 2tsp of mild curry powder

– 2 sweet potatoes

– 1 tbsp of basil

– 1 tsp ginger (cut in to very small cubes)

Cooking method :

Peal and slice sweet potato; steam until soft*

Fry your onion on a little bit of olive oil for 3 minutes. Add chicken and curry powder, fry for 5 minutes. Add tomatoes and coconut milk and simmer for 5 minutes.

Meanwhile wash your cauliflower and blend it in the food processor (if your baby/child is older you can divide it in to small florets instead).

Add cauliflower in to the curry and simmer for another 10minutes. At the end add basil.

Cut sweet potatoes in small cubes and combine with the curry.

Your dinner is ready to serve!

* I like to cook potatoes separately by steaming to preserve more nutritions and because it’s so much easier to cut them in small cubes once they are cooked.

ANOTHER DAY, ANOTHER MEAL …RICE AND APPLE BAKE

ANOTHER DAY, ANOTHER MEAL…

RICE AND APPLE BAKE

My mum used to make it for us all the time. This can be serve as a snack, supper or a desert.

You can make a very healthy version of it or just healthy one. What is important is make lots of it as the whole family will want to eat it.

Ingredients :

– 1kg of sweet apples

– 250g of brown and wild rice mix (this can be replaced by white rice)

– 1 vanilla flavour actimel

– 400ml of milk (this can be replaced by water)

– 1tsp cinnamon

Cooking method :

Heat up your oven to 200C.

Cook rice in milk following cooking instruction on the packet.

Peal and grate all apples.

Prepare round, 30cm cake tin by coating it in a very thin layer of butter. Put half of your rice in to the cake tin, then add your apples and cover it with the remaining rice. Pour over actimel.

Bake for 20 minutes.

Dish is ready to serve straight away, hope that your kids will enjoy it as much as me and Chloe did.

Remember to be careful with the way you store cooked rice. This dish can be stored for up to 2 days in an airtight container or frozen within an hour, for up to 3 months.

Babies and kids love pancakes. This is a great breakfast, snack or a very healthy desert.

– 3 bananas

– 2 tsp baking soda

– 1 1/2 cup of flower

HEALTHY BUT SO YUMMY KIDS PARTY FOOD ! Yes it is possible !!!

Kids Birthday Parties can be fun, yummy and … Heathy ! Yes they can ! There is no need to buy only junk food or to have everything with added sugar.

A few weeks ago I organised Chloe’s 1st birthday party. I wanted a sugar free party, why? Because most of Chloe’s guests were 1 year old or under and because I haven’t given Chloe sugar before. I have gathered lots of different ideas about kids party food from Pinterest and I have  adapted some sugary recipes so that they are sugar free.

This is what I have prepared for the party

ICE CREAM CONES

Ice Cream Cones dipped in blended blueberry and coconut.  You can make so many different versions of it, depending on the age of the kids.

– chocolate and nuts

– chocolate and coconut

– blueberry and cornflakes

– melted marshmallows

ICE CREAM CONES WITH FRUITS

Stuff ice cream cones with any fruits you like. It’s sweet, healthy and it looks great.

SWEETCORN AND PEAS

All kids love those ! Put them in to cute little cupcake cases to serve.

KIWI FLOWERS

Another fun way to serve fruits. Use a small cookie, flower cutter to use around the kiwi. Top the kiwi with a raspberry and add a leaf of mint to finish it of.

STRAWBERRIES
Strawberry is another great replacement to sweets/cookies. Because of its sweetness and vibrant colour kids (most of the kids) love them.

Dip strawberries in a soft cream and … coconut for a super healthy snack or in dark chocolate and then coconut if your kids are already eating chocolate.

You can also cut strawberry in half and put little dots of soft cream/ chocolate on top to make little ladybirds.

HEART AND STAR SHAPED SANDWICHES

I know that this is a lot of work but I can do once a year for a special occasion. Just make your sandwiches and flatten them,  use biscuit cutter of a desired shape to cut them. Just remember that the sandwich needs to be very simple : soft cheese, cheese or ham are ideal.Screen Shot 2015-11-24 at 20.46.23

MAGIC WAND

Kids love blueberries so get some of them on a toothpick, topped with a star cut out of watermelon and you have a magic wand ready. I have used bought toothpicks with gold stars on top of it.

BANNANA MUFFINS

Bannana sugar free muffins are a great alternative to the traditional ones. They have been a hit on all of the babies parties I have been to (you can find the recipe on my blog).

ANOTHER DAY, ANOTHER MEAL …MEATBALLS WITH CABBAGE IN TOMATO SAUCE

ANOTHER DAY, ANOTHER MEAL….

MEATBALLS WITH CABBAGE IN TOMATO SAUCE

Golabki is a traditional polish dish of a cabbage leaves filled with mincemeat and rice in a tomato sauce. I really wanted Chloe to try it so I have came up with a baby version of this dish, surpassing it worked and Chloe loved it.
Ingredients :

– 100g of cabbage (cut small)

– 200g pork mincemeat

– 50g carrot (cut in to small squares)

– 500ml vegetable stock

– 2 sweet potatoes

– 50g couscous

– 1 egg

– 3 tbsp of tomato pure

– 1 tsp of oregano

– 1 tsp of basil

– 1 garlic cove

Cooking method :

Make the couscous. Mix half of the cabbage, mincemeat, egg, couscous, garlic and oregano together. Form little meatballs.

Bring vegetable stock to boil and add tomato pure. Add meatballs, cabbage, carrot and basil to the boiling vegetable stock, simmer for 15-20 minutes. Mine while cook sweet potato then cut in to small cubes. Add potatoes to meatballs and you are ready to serve !

Not all perfect …. 😊

I very often feel like a yummy mummy: organised, dressed nicely, make up and hair done, tidy house (most of the time😊)happy and clean baby in the pram … You would look at me today and think lucky cow: got full night of sleep, didn’t have to get up early and had a morning to herself … You couldn’t be more mistaken…. I haven’t slept for 2 night in the row now ( I don’t think that getting up every hour to crying baby you can call sleeping). I have to get up every morning at 4:15am to go to work…. The only reason You don’t get scared when you look at me it’s because I have LOTS of make up on (I am surprised that you can see my face under all of the foundation, highlighter and canceller). I am just about able to keep my eyes open but I will put a smile on my face because it makes it so much easier than being miserable. You don’t see all of the coffee I consume to get me through the day, you don’t see that I keep yawning all the time. You don’t see me eating ridiculous amount of sugary crap to keep me going (normal healthy food doesn’t work in such a extreme situations).

By the time I get home I am beyond exhausted but I get a lot of energy as soon as I see my babies cute face. I know that I have only 3,5 hours with Chloe so this time of the day is precious and I won’t let stupid tiredness get in the way. By the time Chloe is asleep I am like a zombie …. I go to bed and pray for a better night of sleep …. No ones life is perfect and easy all the time , even if it might look like it on the picture …
